Blueberry Crumble
Makes one 9x13-inch pan
Ingredients:
- 2 c. flour (I do 1 c. white + 1 c. whole wheat)
- 2. quick-cooking oats
- 1 1/2 c. brown sugar
- 1/2 tsp. salt
- 1 c. butter, softened
- 5 c. blueberries (fresh or frozen)
- 1/2 c. sugar
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, combine the flour, oats, brown sugar and salt; cut in butter until crumbly. (I use an electric-mixer.)
- Press half of the mixture into a greased 9x13-inch pan.
- Bake for 10 minutes or until golden brown around the edges.
- Combine the blueberries and sugar; sprinkle over crust. Top with remaining oat mixture; press down gently.
- Bake 35 minutes longer or until golden brown .
- Serve warm with ice cream if desired.
