Lemon Blueberry Bread
Ingredients:
- 1/3 c. butter
- 1 c. sugar
- 3 Tbsp. lemon juice
- 2 eggs
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 1 c. fresh or frozen blueberries
Glaze:
- 2 Tbsp. lemon juice
- 1/4 c. sugar
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl, beat butter, sugar, juice, and eggs.
- Combine flour, baking powder, and salt; stir into egg mixture alternately with milk.
- Fold in blueberries.
- Pour into a greased loaf pan.
- Bake for 60 to 70 minutes or until bread tests done.
- Cool in pan for 10 minutes. Meanwhile, combine glaze ingredients.
- Remove bread from pan and drizzle with glaze.
- Cool on wire rack.
